Quinoa is one of the healthiest grains you can find. It is high in protein and many other vitamins. This light dish is great for lunch or a side dish for dinner.
Quinoa with Steamed Edamame and Spinach, by Caroline Davis
- 1 cup of raw quinoa
- 2 TBSP butter
- 1 cup of sautéed videlia onions (sauté until brown)
- 1 cup Edamame, shelled and steamed
- 1 bag of baby spinach, chopped in Food Processor or by hand
Optional: Balsamic Glaze for Garnish
- To cook quinoa, add one cup of quinoa to 2 cups of boiling water
- Boil for about 15 min or until tender
- Add butter to cooked, warm quinoa
- Sautee onions until golden brown
- Add spinach to onion mixture and combine
- Mix spinach and Onions with Quinoa
- Add Edamame
- Serve warm or room temperature
- Drizzle with Balsamic Glaze
