Quinoa with Edamame and Spinach

Quinoa is one of the healthiest grains you can find.  It is high in protein and many other vitamins.  This light dish is great for lunch or a side dish for dinner.

Quinoa with Steamed Edamame and Spinach, by Caroline Davis

  • 1 cup of raw quinoa
  • 2 TBSP butter
  • 1 cup of sautéed videlia onions (sauté until brown)
  • 1 cup Edamame, shelled and steamed
  • 1 bag of baby spinach, chopped in Food Processor or by hand

Optional: Balsamic Glaze for Garnish

- To cook quinoa, add one cup of quinoa to 2 cups of boiling water
- Boil for about 15 min or until tender
- Add butter to cooked, warm quinoa
- Sautee onions until golden brown
- Add spinach to onion mixture and combine
- Mix spinach and Onions with Quinoa
- Add Edamame
- Serve warm or room temperature
- Drizzle with Balsamic Glaze
